CREAM CHEESE CHOCOLATE CHIP MUFFIN


Can you make any? This season I did not. I was able to, but I understood I obsessed with them (that was not healthy), so my recent approach was to maintain looking onwards and upward all through the year. Life is a journey, and every day a part of the journey. Amidst wedding preparation, savoring at home with my loved ones, and preparing to move all my crap belongings to Louisiana, God is teaching me trust Him and to put 1 foot before another. When I recall, it works.



Enough pontificating -- to the cake. I'm very, very excited to share this recipe with you (plus a full size version next week( ideally ) because it has been around my to-do listing for awhile, and once I eventually got around to concocting itexceeded my expectations. I am a realist-bordering-on-pessimist, therefore this occurs in the meals section that is experimental. However, my expectations were surpassed by this Cream Cheese Chocolate Chip Muffin with molten cream cheese centre and its gooiness.

INGREDIENTS

  1. 1 med. Egg
  2. 2 T. Briana's Baking Mix
  3. 11/2 T. cocoa powder
  4. 1 T. THM Super Sweet Blend (or longer, to taste)
  5. 1/2 tsp. glucomannan
  6. 1/4 tsp. Baking powder
  7. 2 T. reduced-fat cream cheese

INSTRUCTIONS

  1. Whisk the egg and water together in a large mug or a small ceramic bowl.
  2. Add the dry ingredients and whisk until smooth.
  3. Dip the cream cheese into the middle and top with a sprinkle of sugar-free chocolate chips.
  4. Microwave for 1 minute, 20 seconds, then check on it. I microwave mine but the time can change by microwave. I like it to be a bit wet in the center so it is not overdone.
  5. Enjoy hot because it will solidify as it cools thanks to the glucomannan. I like to have a bite of the cream cheese centre!
  6. I suggest adding a tiny protein onto the side if ingestion this as a snack or meal on its own.

NOTES

  1. If you do not have any of my baking mix on hand, you can try substituting THM Baking Blend.-Different brands of glucomannan can vary in potency, so in the event that you become aware of an unusual texture in the cake, consider decreasing the amount a bit. Konjac Foods brand, which you can find from Amazon or even Netrition is used by me.
  2. -The sweetness was great for me because the cream cheese and chocolate chips balance things out, but don't hesitate to add more sweetener. I did not feel like making an extra step, although you might also combine the cream cheese and some sweetener before adding it into the cake.
