INGREDIENTS

- 1/2 cup Erythritol (or up to 3/4 cup if you enjoy them really sweet)
- 2 tsp Vanilla extract
- 3 cup Blanched almond milk
- 1/4 tsp Sea salt
INSTRUCTIONS
- Preheat the oven to 350 degrees F (177 degrees C). Line a cookie sheet with parchment paper.
- Use a hand mixer or stand mixer to beat together the butter, cream cheese, and erythritol, till it is fluffy and light in colour.
- Beat in the vanilla extract, salt and egg .
- Beat in the almond milk, 1/2 cup (64 g) in a time. (The dough will be dense and somewhat crumbly, but should adhere when pressed )
- Utilize a moderate cookie scoop (approximately 1 1/2 tablespoon, 22 mL quantity ) to scoop balls of the dough on the cookie sheet. Flatten with your own hands.
- Bake for approximately 15 minutes, until the edges are lightly golden. Allow to cool completely in the pan before tackling (biscuits will harden as they cool).
