INGREDIENTS

  2. 1/2 cup Erythritol (or up to 3/4 cup if you enjoy them really sweet)
  3. 2 tsp Vanilla extract
  4. 3 cup Blanched almond milk
  5. 1/4 tsp Sea salt

INSTRUCTIONS

  1. Preheat the oven to 350 degrees F (177 degrees C). Line a cookie sheet with parchment paper.
  2. Use a hand mixer or stand mixer to beat together the butter, cream cheese, and erythritol, till it is fluffy and light in colour.
  3. Beat in the vanilla extract, salt and egg .
  4. Beat in the almond milk, 1/2 cup (64 g) in a time. (The dough will be dense and somewhat crumbly, but should adhere when pressed )
  5. Utilize a moderate cookie scoop (approximately 1 1/2 tablespoon, 22 mL quantity ) to scoop balls of the dough on the cookie sheet. Flatten with your own hands.
  6. Bake for approximately 15 minutes, until the edges are lightly golden. Allow to cool completely in the pan before tackling (biscuits will harden as they cool).
