Keto Crustless Mixed Berry Cheesecake Squares
This is a tasty keto dessert that's sugar free and very low carb and can be produced in only a couple of minutes. We call it a cheesecake but it feels like a dessert with all a cheesecake's consistency, as it doesn't have a crust.
A couple of things are essential to acquire a perfect consistency: the butter, egg and cream cheese has to be at room temperature, otherwise it won't blend together and the end result won't be smooth.
The recommended is 1 to 2 weeks before cooking to eliminate these things from the refrigerator, all depending on where you reside.

INGREDIENTS
- 8 ounces cream cheese room temperature
- 10 tablespoons butter room temperature
- 6 eggs moderate size in room temperature
- 2 tsp vanilla
- 3 tablespoons So Nourished Erythritol or to a preference
- 2 cups frozen mixed berries

INSTRUCTIONS
- Preheat oven to 320F
- In a large mixing bowl, combine all of the components excluding the berries and blend well until it smoothens.
- Spray a square 8-inch dish with coconut oil and then pour the mix into it.
- Spread the berries on top but place it lightly so as to not spill the mix. Bake in 320°F for half an hour till the centre is cooked, or wait.
- Remove from the oven and allow it cool before cutting into 12 squares. Set the cut pieces and serve down them.
