- 2 tbsp olive oil (divided)
- 1/2 big Onion (diced)
- 1 pound Chicken breast (cut into bite size pieces)
- 1/2 big Bell pepper (sliced )
- Black pepper
- 2 tablespoon Chives (chopped)
INSTRUCTIONS
- Heat a tbsp of olive oil in a skillet or wok, over medium heat. Add the garlic and cook for 30 seconds. Add onion. Cook for 5-7 minutes, until translucent.
- Increase heat . Add the chicken along with the remaining oil. Stir fry for 3-5 minutes, until the chicken is gold. (Do not overcook to prevent drying out it. You would like it to be approximately 80%-90% completed.)
- Add the cabbage, bell pepper, and coconut aminos. Season with pepper, sea salt, and ground ginger. Stir fry for 3-5 minutes, until the cabbage is tender. Garnish with chives.
