Keto Gumbo (Slow Cooker, THM:S, Low Carb, Paleo, Ketogenic, Whole30)

- 3 pounds Chicken Thighs, boneless and skinless (I used the ones from my ButcherBox)
- 1 pound frozen Shrimp, deveined, no tails
- 1 pound Sausage, cut into rounds
- 2 Celery Stalks
- 6 oz Tomato Paste
- 15 oz Diced Tomatoes
