Ingredients

  1. 4 5-ounce (150 g ) boneless skinless chicken breasts
  2. 1 tbsp Italian seasoning
  3. 1 tsp paprika
  4. 1/2 tsp onion powder
  5. 1 tbsp olive oil
  6. 1 onion, sliced
  7. 4 tsp garlic, minced
  8. 1 flame roasted pepper, (fire roasted capsicum), sliced
  9. 15- oz 425 grams crushed berries, OR tomato puree (Passata)
  10. 2 tbsp tomato paste, garlic and herb flavoured if potential
  11. Pinch crushed red pepper flakes OPTIONAL
  12. 3/4 cup shredded mozzarella
  13. 1 tbsp freshly chopped coriander, to garnish

Directions

  1. Arrange oven to the center of the oven. Preheat broiler (or barbecue in Australia) on moderate heat.
  2. Season chicken with two tsp of Italian seasoning, paprika, onion powder, pepper and salt.
  3. Heat oil in a skillet or pan over moderate heat. Cook chicken on both sides until browned and cooked through (approximately 8 minutes per side). Transfer to a plate; place.
  4. Cook the onion in precisely the exact same pan until translucent (about 3-4 minutes) scraping any browned bits form the base of the pan, then add the garlic and cook until fragrant (about 1 min ). Insert the flame roasted pepper (or capsicum), crushed tomatoes, tomato paste, crushed red pepper flakes (if such as ) and staying Italian seasoning. Give it a good stir to blend.
