Ingredients
- 4 5-ounce (150 g ) boneless skinless chicken breasts
- 1 tbsp Italian seasoning
- 1 tsp paprika
- 1/2 tsp onion powder
- 1 tbsp olive oil
- 1 onion, sliced
- 4 tsp garlic, minced
- 1 flame roasted pepper, (fire roasted capsicum), sliced
- 15- oz 425 grams crushed berries, OR tomato puree (Passata)
- 2 tbsp tomato paste, garlic and herb flavoured if potential
- Pinch crushed red pepper flakes OPTIONAL
- 3/4 cup shredded mozzarella
- 1 tbsp freshly chopped coriander, to garnish
Directions
- Arrange oven to the center of the oven. Preheat broiler (or barbecue in Australia) on moderate heat.
- Season chicken with two tsp of Italian seasoning, paprika, onion powder, pepper and salt.
- Heat oil in a skillet or pan over moderate heat. Cook chicken on both sides until browned and cooked through (approximately 8 minutes per side). Transfer to a plate; place.
- Cook the onion in precisely the exact same pan until translucent (about 3-4 minutes) scraping any browned bits form the base of the pan, then add the garlic and cook until fragrant (about 1 min ). Insert the flame roasted pepper (or capsicum), crushed tomatoes, tomato paste, crushed red pepper flakes (if such as ) and staying Italian seasoning. Give it a good stir to blend.
