LOW CARB SLOW COOKER MEATBALLS

Ingredients
The meatballs
- 1 lb ground beef
- 1 lb ground pork
- 1 large egg.
- 1/4 cup mayonnaise
- 14 g pork rinds crushed
- 2 tablespoon parmesan cheese grated
- 1 teaspoon black pepper
- 1 teaspoon salt
The sauce
- 1 14 ounce jar chili sauce
- 1 12 ounce jar sugar free grape or raspberry jam
Directions
- Set slow cooker to high, cover and put aside. Preheat oven to 400. Grease a sheet pan with olive oil.
- Mix all meatball ingredients together in a bowl. Roll to 42 meatballs, about 1.5 ounces each. Place on sheet pan and bake 12-15 mins in oven that is PREHEATED.
- While the meatballs are baking include the sauce ingredients into the slow cooker, combine well. Be aware - if desired, put in a dash of garlic and onion powder.
- Position cooked meatballs in slow cooker, mix, cover. Cook on high for 2-3 hours or low for 2 hours.
