My darling husband enjoys this Low Carb Puff Pancake greater than any other low-carb pancake recipe. It makes four sandwiches in about thirty minutes.

Ingredients

  1. 1 teaspoon baking powder
  2. 1/4 cup almond milk
  3. 2 tablespoon butter

Directions

  1. Dump all ingredients, except butter and blend on high for several seconds until the components are integrated into the batter.
  2.  Once oven is heated, then place butter in a 9" x 12" cake pan and then put with just the butter .
  3.  Melt the butter for 3-5 minutes until the butter is wrapped at the pan's base. Remove from oven.
  4.  Pour lightly and return to oven.
  5.  Bake for 15-17 minutes, until pancake is puffed and golden.
  6.  Cut the pancake after baking and then function.
