This keto meatloaf recipe was the brainchild of getting a few chorizo from the fridge that had to be utilized. Ingredients

  1. 1 pound Ground beef (I used 80/20)
  2. 1 pound Earth Chorizo
  3. 1/2 cup Coconut flour or 1 cup Almond flour

  5. 2 Garlic cloves, minced
  6. 1/2 tbsp Garlic powder
  7. 1/2 tbsp Onion powder
  8. 1/2 tablespoon Smoked paprika
  9. 1/2 tsp salt
  10. 1/2 tsp pepper
  11. 6 ounces moderate or sharp cheddar cheese block, cut into chunks
  12. 1/2 cup Salsa

Directions

  1. pre-heat oven to 350F
  2. Mix all ingredients, except cheese and salsa, together in a large bowl
  3. Add a portion the meatloaf mix to a loaf pan and press to the bottom (in case you do not possess a loaf pan large enough, then you can shape the mixture into a loaf shape onto a sheet pan)
  4. Set the cheese to the middle of the skillet, leaving about an inch on either side.
  5. Insert the remainder of the meatloaf into the pan and press down it to compress it slightly.
  6. Bake in the oven for 45 minutes or until an internal thermometer reads 165F
  7. Remove from oven and let sit 10 minutes. Serve with salsa.

Recipe Notes

  1. To get 1/6th of recipe: 532 carbs / 38.9grams fat / 7.4 carbohydrates / .8g fiber / 36.2grams protein
  2. If you aren't that keen on chorizo, simply use more ground steak or perhaps floor pork!
  3. You can use mild cheddar, sharp cheddar, or moderate cheddar. Whichever you prefer
  4. Do not over work the meatloaf mix or your own meatloaf will be dumb.
